Sawyer was asked by the editors of a cookbook to provide a comment about what food will be like in the future. Here's what he had to say . . . Food is one of humanity's great pleasures, and in the future, it's only going to get better. Instead of changing foods, genetic engineering will change us, and the way we digest. Why should the foods we like best be the least good for us? Future generations of humanity will be able to eat any food, no matter how rich. Sugar, salt, fat, cholesterol — all the things we love but have to consume in moderation now will have no restrictions on them in future. All food will be nutritious; the sole criterion for choosing meals will be taste. And, of course, dishes that haven't been enjoyed for thousands of years will be back on the menu: we will resurrect mammoths and moas from recovered DNA.
